Det er et br\u00f8d der kan spises uden noget, med sm\u00f8r eller til mad.<\/p>\n<p>\/Dann<\/p>\n<p><strong>Ingredienser<\/strong><\/p>\n<ul>\n<li>1,8 gram t\u00f8rg\u00e6r<\/li>\n<li>1 spsk hvedesurdej<\/li>\n<li>213 gram lunken vand<\/li>\n<li>213 gram hvedemel<\/li>\n<li>100 gram rugmel<\/li>\n<li>110 gram grahamsmel<\/li>\n<li>323 gram hvedemel<\/li>\n<li>13 gram salt<\/li>\n<li>2 gram t\u00f8rg\u00e6r<\/li>\n<li>333 gram lunken vand<\/li>\n<li>Drys til br\u00f8d (se separat opskrift)<\/li>\n<\/ul>\n<p><strong>Fremgangsm\u00e5de<\/strong><\/p>\n<ol>\n<li>Kom 213 gram lunken vand op i en sk\u00e5l<\/li>\n<li>Opl\u00f8s 1,8 gram t\u00f8rg\u00e6r i vandet<\/li>\n<li>Opl\u00f8s surdejen i vandet<\/li>\n<li>Lad det hvile i 5 minutter<\/li>\n<li>Bland 213 gram hvedemel i sk\u00e5len og r\u00f8r godt rundt<\/li>\n<li>Stil det til at hvile ved stuetemperatur i minimum 12 timer<\/li>\n<li>Bland 2 gram t\u00f8rg\u00e6r samt 333 gram lunken vand i sk\u00e5len og r\u00f8r godt rundt<\/li>\n<li>Lad det hvile i 5 minutter<\/li>\n<li>Bland resten af melet i sk\u00e5len og r\u00f8r godt rundt<\/li>\n<li>Lad dejen st\u00e5 i 15 minutter<\/li>\n<li>Drys saltet ud over dejen<\/li>\n<li>Vend dejen rundt i sk\u00e5len hvert 10. minut i en time<\/li>\n<li>Kom sk\u00e5len med dejen i k\u00f8leskabet i ca. 12 timer<\/li>\n<li>H\u00e6ld dejen ud p\u00e5 et let melet bord<\/li>\n<li>Del dejen i fire lige stor stykker<\/li>\n<li>Lad dejen hvile i 15 minutter<\/li>\n<li>Forbered en bageplade med bagepapir (eller en form til flutes drysset med rismel for at undg\u00e5 det br\u00e6nder fast)<\/li>\n<li>H\u00e6ld \u201ddrys til br\u00f8d\u201d ud p\u00e5 bordet, s\u00e5 baguettesene kan rulles i det<\/li>\n<li>Form til baguettes i samme l\u00e6ngde som bagepladen<\/li>\n<li>Rul den enkelte baguettes i \u201ddrys til br\u00f8d\u201d<\/li>\n<li>Placer baguettesene p\u00e5 bagepladen<\/li>\n<li>Lad dem h\u00e6ve under d\u00e6kke i 1\u00bd time<\/li>\n<li>Sk\u00e6r et passende m\u00f8nster i baguettesene (langs l\u00e6ngden men med lidt overlap). Det skal v\u00e6re \u00bd-1 cm dybt<\/li>\n<li>Bag dem 23 minutter i en forvarmet ovn p\u00e5 250 grader.
