Den best\u00e5r af mel og sm\u00f8r, der er lavet til en pasta lignende konsistens p\u00e5 panden. Blandingsforholdet mellem de to er 1:1 efter v\u00e6gt. L\u00e6ngden af den tid de f\u00e5r p\u00e5 panden afg\u00f8r farven og smagen. Dermed opst\u00e5r der forskellige typer af roux, der bruges til forskellige farver sovse.<\/p>\n<p>Roux kan bruges som en start i en sauce eller den kan tils\u00e6ttes ved kraftig piskning efterf\u00f8lgende. N\u00e5r roux tils\u00e6ttes skal saucen koge kort tid, hvorefter den skal simre i minmum 20 minutter for at f\u00e5 den \u00f8nskede j\u00e6vnning. De tre typer roux skal varmes i nedenst\u00e5ende tid\n<ul>\n<li>Hvid: 2-3 min<\/li>\n<li>Blonde: 3-5 min<\/li>\n<li>Brun: 5-10 min (den skal ogs\u00e5 lugte af popcorn)<\/li>\n<\/ul>\n<\/li>\n<li>Rouxen er nu f\u00e6rdig og kan enten bruges straks ved at forts\u00e6tte med at h\u00e6lde fond i kasserollen eller den kan gemmes i k\u00f8leskabet i 1-2 uger<\/li>\n<li>God forn\u00f8jelse!<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Roux er en j\u00e6vnemetode til saucer.
